Crispy Eggplant
Ingredients:
- 2 eggplants
- ⅓ cup all-purpose flour
- ⅓ cup water
- ½ cup breadcrumbs
- 1 teaspoon sesame seeds
- 1 teaspoon dried herbs or fresh thyme and rosemary
- 1 teaspoon garlic powder
- Pinch of salt and pepper
- Oil for frying
Method:
- Peel your eggplants if desired, or keep the skin on for extra crunchiness.
- Slice the eggplants into rounds or strips, as preferred.
- Make the batter by mixing the flour, water, garlic powder, herbs, salt, and pepper in a bowl until smooth.
- Prepare the breadcrumbs by blending 2 slices of toasted bread in a blender until fine. Add the sesame seeds to the crumbs.
- Add oil to a frying pan and heat over medium.
- Dip each eggplant slice into the batter, ensuring both sides and edges are coated.
- Dip the eggplant into the breadcrumbs, covering both sides.
- Place each coated eggplant slice in the frying pan and cook until golden brown on both sides.
Serve hot with your favorite salads and potato wedges!
