Crispy Eggplant

Ingredients: 

  • 2 eggplants
  • ⅓ cup all-purpose flour
  • ⅓ cup water
  • ½ cup breadcrumbs
  • 1 teaspoon sesame seeds
  • 1 teaspoon dried herbs or fresh thyme and rosemary
  • 1 teaspoon garlic powder
  • Pinch of salt and pepper
  • Oil for frying

Method:

  • Peel your eggplants if desired, or keep the skin on for extra crunchiness.
  • Slice the eggplants into rounds or strips, as preferred.
  • Make the batter by mixing the flour, water, garlic powder, herbs, salt, and pepper in a bowl until smooth.
  • Prepare the breadcrumbs by blending 2 slices of toasted bread in a blender until fine. Add the sesame seeds to the crumbs.
  • Add oil to a frying pan and heat over medium.
  • Dip each eggplant slice into the batter, ensuring both sides and edges are coated.
  • Dip the eggplant into the breadcrumbs, covering both sides.
  • Place each coated eggplant slice in the frying pan and cook until golden brown on both sides.

    Serve hot with your favorite salads and potato wedges!
