A traditional Ugandan one-pot meal made with matoke and a rich groundnut sauce. No oil version!
Ingredients:
- 10–12 fingers of matoke (green cooking bananas)
- 1 large onion, chopped
- 2 tomatoes, chopped
- 1 cup groundnut (g-nut) paste
- 2 cups water (or adjust for desired thickness)
- Salt to taste
Method:
- Prepare the matoke:
Peel the matoke and cut each banana into halves. Rinse and set aside in water to prevent browning. - Add the matoke, onions and tomatoes
In a large saucepan add 2 cups of water and heat
Drain and add the matoke pieces to the pan. Add onions and tomatoes and cook for 10 minutes - Add the groundnut sauce:
Mix the g-nut paste with water in a bowl until smooth.
Pour into the pan and stir well. Cover the pan and simmer on low heat for 25–30 minutes, stirring occasionally to prevent sticking.

To Serve:
Serve hot, as is. Traditionally eaten on its own, but you can pair it with sliced avocado or a simple tomato and onion salad.
