Day 6: Breakfast – Oats, Fruit & Plant-Based Yogurt Bowl

A refreshing, filling start to your day!

This simple, nutritious recipe brings together oats, your favourite seasonal fruits, crunchy nuts, and creamy plant-based yogurt for a delicious morning boost.

Ingredients (Serves 1–2)

  • 1/3 cup oats (rolled or quick-cooking)
  • 1/2 cup chopped watermelon
  • 1/2 cup chopped pineapple
  • 1/2 cup chopped mango
  • 1/2 an apple, chopped
  • A handful of almond nuts (roughly chopped)
  • A handful of cashew nuts
  • 1 tsp chia seeds
  • 1 tsp flax seeds (ground for best nutrition)
  • 1/2–1 cup plant-based yogurt
    (We love Sapphire Cashew Nut Yogurt!)
  • A sprinkle of cinnamonInstructions
  1. Prepare the oats
    You can use them raw (as in overnight oats), or cook them lightly with water or plant milk for a softer texture.
  2. Chop your fruits
    Dice watermelon, pineapple, mango, and apple into bite-sized pieces.
  3. Assemble your bowl
    In a bowl or jar, layer the oats, then spoon over the plant-based yogurt. Add the chopped fruits on top.
  4. Add crunch and nutrition
    Sprinkle with chopped almonds, cashews, chia seeds, and ground flax seeds.
  5. Serve and enjoy!
    Enjoy immediately, or chill for 15–20 minutes if you like it extra refreshing.
