Observations

To make a soupy katogo, add more water. I did not put any specific measurements to the ingredients because when making katogo, we don’t measure. Instincts are used depending on how many people are to be cooked for. Clearly, I was cooking for a full house and thus the large tray.

Method:

  1. On high fire/heat, add cooking oil to the saucepan and let it get hot.
  2. Add the garlic and onions and wait for them to become translucent.
  3. Add the tomatoes, chili oil, curry powder, and salt and stir well.
  4. Add the Irish potatoes first, then the yams, and then the sweet potatoes.
  5. Top the tubers with the cooked beans and cover the pan for about 10 minutes.
  6. Add half a glass of water and stir so that the beans are evenly distributed.
  7. Let the Katogo cook till the Irish potatoes are soft and tender.
  8. Keep checking to make sure the tubers do not burn.
  9. Remove the food from the fire and serve warm.
  10. Katogo goes well with avocadoes.
