Choco Energy Balls
Ingredients to make 40 balls:
- 70g raw cacao powder (or
- unsweetened cocoa powder)
- 210g cashew nuts
- 70g groundnuts (Gnuts)
- 60g almonds
- 250g dates (pitted)
- 50g currants or raisins
- 50g desiccated coconut
- ½ teaspoon vanilla essence
- Pinch of salt (optional)
- 2 tbsp water
Method:
Prepare your container or lay out parchment paper to place your finished
balls onto.
Place half of the desiccated coconut into a separate small bowl; you will
use this later for coating the balls.
In a food processor, add the pitted dates, desiccated coconut, cacao
powder, groundnuts, almonds, currants, vanilla essence, salt, and water.
Mix until it forms a paste-like texture. If the mixture isn’t sticking
together, add more water as needed. The balls should be soft and chewy.
Using a large spoon, take a couple of spoonfuls of the mixture from the
food processor and place it in your hands. Roll into balls, then roll the
balls in the bowl of coconut until they are fully coated.
Place the finished balls into your container or onto the parchment-lined
baking sheet or plate.
Put the balls in the fridge or freezer to allow them to firm up for later
enjoyment.
