Hearty, vibrant veggie burgers made with fresh beans, sweetcorn, and beetroot—perfect for a wholesome, protein-rich meal.

Ingredients
For the burgers:
- 1½ cups fresh beans (boiled and mashed)
- ½ medium onion, finely diced
- 2 cloves garlic, crushed
- 1 small beetroot, grated
- ½ cup fresh sweetcorn
- 2 tbsp ground flaxseed
- 2 tsp coriander powder
- 2 tsp fresh rosemary, finely chopped
- 1 tsp smoked paprika
- ½ cup flour
- 2 tbsp soy sauce
- Oil for frying
To Serve (optional):
- 4 burger buns or slices of bread
- Tomato ketchup or sweet chili sauce
- 3–4 lettuce leaves
- 1–2 tomatoes, sliced
Method
- Prepare the base:
- Boil the fresh beans until soft, then mash them in a large mixing bowl.
- Grate the beetroot and add it to the mashed beans.
- Stir in the sweetcorn, diced onion, and crushed garlic.
- Mix the flavours:
- Add ground flaxseed, coriander powder, rosemary, smoked paprika, and soy sauce.
- Mix everything thoroughly.
- Bind and shape:
- Add flour gradually and mix until the mixture holds together well.
- Divide the mixture and shape into 4–6 burgers.
- Cook the burgers:
- Heat a little oil in a frying pan over medium heat.
- Cook the burgers for about 4–5 minutes on each side, until golden brown and firm.
- Assemble your burgers (optional):
- Toast your burger buns or bread.
- Add a lettuce leaf, tomato slice, and your cooked burger.
- Top with ketchup or sweet chili sauce.
Tips
For extra firmness, chill the burgers in the fridge for 30 minutes before frying.
