Day 7: Breakfast – Easy Plant-Based Banana Pancakes (Healthy Kabalagala)

Fluffy, naturally sweet, and made with just a few wholesome ingredients.

Ingredients (Makes 6–8 small pancakes)

  • 2 ripe bananas, mashed
  • 1 cup plant-based milk (e.g., oat, almond, or soy)
  • 1 cup flour (whole wheat or all-purpose)
  • 1 tsp baking powder
  • A pinch of salt
  • Oil or vegan butter for cooking

Instructions

  1. Mash the bananas in a bowl until smooth.
  2. Add plant-based milk and mix well.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Combine wet and dry ingredients, stirring gently until just mixed. Do not overmix – lumps are okay.
  5. If you like, stir in a pinch of cinnamon and a dash of vanilla extract for extra flavor.
  6. Heat a non-stick pan or skillet over medium heat and add a little oil or vegan butter.
  7. Spoon batter onto the pan to form small pancakes. Cook for 2–3 minutes or until bubbles form on the surface, then flip and cook another 1–2 minutes until golden.
  8. Serve warm with your favourite toppings.
