Ingredients (Makes 6–8 small pancakes)
- 2 ripe bananas, mashed
- 1 cup plant-based milk (e.g., oat, almond, or soy)
- 1 cup flour (whole wheat or all-purpose)
- 1 tsp baking powder
- A pinch of salt
- Oil or vegan butter for cooking
Instructions
- Mash the bananas in a bowl until smooth.
- Add plant-based milk and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Combine wet and dry ingredients, stirring gently until just mixed. Do not overmix – lumps are okay.
- If you like, stir in a pinch of cinnamon and a dash of vanilla extract for extra flavor.
- Heat a non-stick pan or skillet over medium heat and add a little oil or vegan butter.
- Spoon batter onto the pan to form small pancakes. Cook for 2–3 minutes or until bubbles form on the surface, then flip and cook another 1–2 minutes until golden.
- Serve warm with your favourite toppings.
